HONEYDEW, A STRONG NECTAR FROM TREE SAP
The difference between honey and honeydew lies in what bees collect: for honey, bees collect nectar from flowers, trees, and shrubs. For honeydew, bees collect a sweet liquid secreted by various insects, which they absorb from the sap of forest trees such as fir, pine, oak, ash, birch, and chestnut.
These insects are known as piercing-sucking insects because they pierce the tender parts of plants to feed on the substances contained in the sap. They are mainly aphids, psyllids, whiteflies, and scale insects. They then reject the substance they cannot digest: this is honeydew.
Bees feed on this exceptional liquid, which they collect from leaves, branches, and tree trunks. They then bring the substance back to their hive, where they transform it into honeydew honey!
This rare nectar has a beautiful dark color: the color comes from the fact that this nectar is very rich in minerals, which makes it darker but also stronger in taste.
